Shrimp Tacos with Mango Salsa – Jeanette Jenkins

These shrimp tacos are incredibly easy to prepare and bursting with delightful flavors. To infuse the shrimp with a sweet, savory, and nutty taste, we season them with a blend of paprika, cumin, and garlic. Then, you top them off with a tantalizing sweet and spicy mango salsa, some crisp and fresh cabbage for added texture, and a dollop of creamy Greek yogurt.

Shrimp and Seasoning Ingredients: 
Shrimp 1lb raw Jumbo Shrimp, tails off and deveined
1 tsp. Smoked Paprika (Add 1/2 tsp or more of Cayenne Pepper to make it spicy to your liking)
1 tsp. Ground Cumin
1 tsp Garlic Powder
1/2 tsp. Himalayan Salt
1/2 tsp. Ground Pepper
2 sprays of Olive Oil
6 Tortillas flour or corn
Shredded cabbage for topping
6 Tablespoons Greek Yogurt (add 1 tablespoon per taco for serving)
2-3 Limes to squeeze over Tacos when serving

Mango Salsa Ingredients:
2 Medium Mangos chopped
1/2 Red Pepper chopped
10 Grape Tomatoes
1/4 Red Onion pressed or minced
1 Clove of Garlic finely chopped
1/2 cup  Fresh Cilantro
juice of 1 lime
1 teaspoon of Himalayan Salt
1 teaspoon of Ground Pepper

Directions: 

1. Shrimp Seasoning: In a small bowl mix paprika, cumin, garlic powder, Himalayan salt and  ground pepper.

2. Spray the shrimp with two sprays of olive oil then add seasoning and mix. Cover the shrimp and let marinate while preparing the salsa. Option to marinate longer.

3.Mango Salsa: In a medium bowl, combine the mango, red pepper, tomato, onion, garlic, lime juice, cilantro, Himalayan salt & ground pepper.  Mix well, cover, and refrigerate until ready to serve.

4.Pan fry in skillet or air fry the shrimp. To pan fry,  spray the skillet with olive oil or favorite cooking spray, add shrimp cook over medium to high heat. Cover the pan for 2-3mins to let the steam cook the shrimp which will keep the moisture. Turn the shrimp over and cook for another 2-3mins until the shrimp is opaque and it has been cooked all the way through.

5. Heat your tortillas on skillet for 1min.

6. Place 3-4 shrimp in a tortilla, top with the mango salsa, cabbage, greek yogurt, a squeeze of lime and enjoy!

So delicious and also re-heats as incredible left overs!
